Wagyu Sushi Roll
A Wagyu sushi roll with grilled shishito peppers and chuka wakame. Finished with Japanese yakiniku sauce lightly torched and topped with caviar.

Story
I wanted this roll to feel rich but still balanced.
Inside the roll I used grilled shishito peppers and chuka wakame. The shishito becomes softer and sweeter once cooked, which works well with the richness of the Wagyu. The chuka wakame brings freshness and texture, so the roll does not feel too heavy.
I used soy paper instead of nori for this roll. It gives a cleaner look and a softer bite. It also makes the roll easier to shape and lets the Wagyu stand out more clearly.
The Wagyu is brushed with Japanese yakiniku sauce and lightly torched. That adds aroma and gives the beef a little more depth. I finished the roll with caviar for a final touch of richness and contrast.
Concept & inspiration
This dish started with the idea of making a rich roll that still feels clean and balanced.
Wagyu brings depth and richness. Grilled shishito adds sweetness. Chuka wakame brings freshness and helps lift the whole roll. Soy paper keeps the roll lighter in taste and cleaner in appearance than nori.
I also wanted the dish to feel refined but still practical. It should look elegant on the plate, but it also needs to make sense when shaping and preparing the roll during service.
