Tom Yum Angel Hair

Angel hair pasta served with a rich and creamy tom yum sauce. Finished with ikura and tobiko to bring a gentle seafood flavour and contrast in texture.

Pasta

Story

I wanted to bring the familiar flavours of Thai tom yum into a pasta dish but in a slightly different way.

I chose angel hair for its delicate texture. The thin strands work well with a creamy sauce and make the dish feel lighter.

For the sauce I wanted something rich and smooth with a gentle tom yum flavour. The idea was not to make it too spicy or overpowering. I wanted the aroma of tom yum to come through while keeping the creaminess of the sauce.

I finished the dish with ikura and tobiko. The ikura brings a burst of savoury seafood flavour while the tobiko adds a little crunch.

Concept & inspiration

The idea was to take a familiar Thai flavour and explore how it could work in a creamy pasta dish.

One of the challenges was getting the balance right. Tom yum has a strong character but I did not want it to dominate the pasta. The sauce needed to be rich enough to coat the angel hair while still allowing the other ingredients to stand out.

I also wanted the ikura and tobiko to have a purpose beyond presentation. Their natural saltiness works with the creamy sauce and brings a different texture to each bite.

For restaurant service I would focus on keeping the sauce consistent and cooking the angel hair at the right time. The roe is added at the end to preserve its texture.
